- Bring 1/2 of the diced onion, 4 cloves of minced garlic, 1 minced chipotle pepper, the 15 oz. can of tomatoes, 2 Tbsp. chili powder and 2 Tbsp. of the adobo sauce to a simmer in a sauce pan.
- Put 2 chicken breasts into the simmering sauce and cover tightly with foil or a lid.** Allow the chicken to cook on a medium low heat until it is easily shreddable with a fork, 30-40 minutes.
- In a large skillet render the 4 slices of cut bacon and the remaining half of your onion over medium heat. Stirring frequently.
- When the bacon is crispy increase your heat to medium high and add the (2) 15 oz. cans of black beans with their juices. Do not strain the beans. We want all the starchy goodness form the liquid in the can. Boil in the pan until the liquid has reduced slightly, ~5 minutes.
- Using a spatula or wooden spoon smash the beans into a paste against the bottom of the pan. Once you have achieved a creamy consistency, remove the pan from the heat and reserve.
- Remove the chicken from the pan and shred with two forks. Allow the remaining sauce to thicken on low heat for 5 minutes. Stir the sauce and set off to the side.
- Assemble your tostadas by spreading the black beans in a thick layer across the top of your shells. Then topping with the shredded chicken, adobo sauce, fresh diced white onion, crumbled queso fresco, cilantro and lime wedges. Eat as many as you can!
Notes
*You can store any remaining chipotle chiles individually in the freezer to use for later.
**Instead of doing the chicken on the stove you can use an Instant pot or other pressure cooker and reduce your cooking time significantly.
