Short Version
I've always despised a meatloaf with ketchup, brown sugar and bacon on top. Instead, try my, easy to make, homemade meatloaf recipe. Choked full on mushrooms and topped with an umami-bomb gravy. This is perfect for large family dinners you can make quickly at home. The best meatloaf recipe without ketchup!

- Preheat oven to 350F
- Combine the breadcrumb and milk in a bowl, set aside.
- Heat a stainless steel sauté pan over medium high heat. Add the oil and when shimmering add the mushrooms.
- Sauté the mushrooms for two minutes stirring constantly.
- Add onions to the pan and continue cooking for an additional 3 minutes until translucent.
- Add minced garlic to the pan. Keep stirring until softened, then remove from the heat.
- Break up the beef into small chunks in a bowl.
- Tip: I like using a stand mixer to mix all my meatloaf ingredients together. It’s easier than using your hands or a spatula. You’ll want to outfit your mixer with the paddle attachment for this.
- Combine the sautéed mushrooms, onions, garlic, soaked breadcrumbs, herbs, salt and pepper in the mixing bowl with the beef and mix until completely combined.
- Place the meat in a deep rectangular baking pan. Cover tightly with aluminum foil.
- Bake the meatloaf for 45 minutes.
- After the time is up remove the foil from the baking pan and bake for another 15 minutes.
- Test the temperature of your meatloaf in the center with a thermometer. If it reads 165 or higher then remove the meatloaf from the oven. Cover with foil again and allow it to rest for 15 minutes before cutting segments and serving.
Mushroom Gravy Instructions
- Heat the butter until foaming in a medium saucepan then add your mushrooms and shallot.
- Cook the mushrooms and shallot on a medium high heat until beginning to caramelize.
- Add the flour to the pan and stir to incorporate.
- Continue cooking for two more minutes, stirring constantly.
- Add the beef stock, whisking to help eliminate lumps.
- Add Worcestershire sauce and ground black pepper
- Bring the gravy to a simmer, it should be beginning to thicken.
- Simmer on low heat for 10 minutes, whisking occasionally.
- Serve over top of your delicious meatloaf!

- Peel the potatoes and cut into six large chunks each. Do this by splitting the potato in half lengthwise and then making two additional cuts across the halves.
- Place the cut and cleaned potatoes in a large pot and fill the pot with cold water until it covers the potatoes by 2”.
- Place the pot on high heat. Salt the water heavily and bring to a low boil.
- Cook the potatoes until they are easily pierced with a fork.
- Meanwhile, heat the milk on the stove in a small saucepan over low heat. Add the shallots, garlic and thyme.
- Bring the milk to a simmer and cook until the shallots and garlic are softened (~20mins)
- Once the potatoes are soft in texture, drain them and pass them through a ricer.
- Remove the thyme sprigs from the milk. Using a blender, puree the milk, shallot and garlic until smooth.
- Incorporate the potatoes, butter and milk mixture together. Salt to taste.
- Cover and keep warm until ready to serve.
